- 1 lb smoked sausage (like kielbasa or chicken sausage), sliced into rounds
- 2 medium sweet potatoes, peeled and cubed
- 1 red bell pepper, sliced
- 1 cup broccoli florets (optional)
- 1 red onion, cut into wedges
- 3 tbsp olive oil
- Salt and pepper to taste
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- Honey Garlic Sauce
- 1/4 cup honey
- 3 tbsp soy sauce (low-sodium recommended)
- 3 cloves garlic, minced
- 1 tbsp apple cider vinegar
- 1 tsp sesame oil (optional)
Instructions
- Prepare Oven & Pan
- Preheat the oven to 400°F (200°C) and line a large sheet pan with parchment paper.
- Combine Ingredients
- In a bowl, toss sausage, sweet potatoes, bell pepper, broccoli, and red onion with olive oil, salt, pepper, paprika, and thyme. Spread evenly on the sheet pan.
- Make Sauce
- In a small bowl, whisk together honey, soy sauce, garlic, apple cider vinegar, and sesame oil. Drizzle half the sauce over the sausage and vegetables and toss to coat.
- Bake
- Bake for 25-30 minutes, stirring halfway through, until sweet potatoes are tender and sausage is browned. Drizzle with remaining sauce before serving.
- Serve
- Serve warm, garnished with fresh parsley if desired.
