- 4 boneless, skinless chicken breasts
- 1 cup canned black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 cup salsa
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 cup shredded Mexican blend cheese
- 2 tbsp olive oil
- Fresh cilantro and lime wedges for garnish (optional)
Instructions
- Preheat grill to medium-high heat or oven to 400°F (200°C).
- In a small bowl, mix chili powder, cumin, garlic powder, salt, and pepper.
- Rub chicken breasts with olive oil and seasoning mix.
- Cut 4 large sheets of heavy-duty foil. Place one chicken breast in the center of each.
- Top each breast with a portion of black beans, corn, bell peppers, and a couple spoonfuls of salsa.
- Fold the foil over the chicken and vegetables, sealing tightly to form packets.
- Grill or bake for 20-25 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
- Carefully open each packet and sprinkle with cheese. Reseal and let sit for 2-3 minutes to melt the cheese.
- Garnish with cilantro and lime wedges if desired before serving.

- Customize with your favorite salsa or add jalapeños for extra heat.
- Packets can be prepped ahead and stored in the fridge for up to 24 hours before cooking.
