Description

Santa Fe Chicken Foil Packets are a vibrant and flavorful all-in-one meal featuring seasoned chicken breasts, black beans, corn, bell peppers, and salsa, all cooked together in convenient foil packets for easy cleanup and big taste.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 cup salsa
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup shredded Mexican blend cheese
  • 2 tbsp olive oil
  • Fresh cilantro and lime wedges for garnish (optional)

Instructions

  1. Preheat grill to medium-high heat or oven to 400°F (200°C).
  2. In a small bowl, mix chili powder, cumin, garlic powder, salt, and pepper.
  3. Rub chicken breasts with olive oil and seasoning mix.
  4. Cut 4 large sheets of heavy-duty foil. Place one chicken breast in the center of each.
  5. Top each breast with a portion of black beans, corn, bell peppers, and a couple spoonfuls of salsa.
  6. Fold the foil over the chicken and vegetables, sealing tightly to form packets.
  7. Grill or bake for 20-25 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  8. Carefully open each packet and sprinkle with cheese. Reseal and let sit for 2-3 minutes to melt the cheese.
  9. Garnish with cilantro and lime wedges if desired before serving.
