Description

This Salty Peanut Banana Pudding takes a classic Southern dessert to the next level! Layers of creamy banana pudding, sliced bananas, crunchy salty peanuts, and buttery cookies come together to create a sweet-and-salty masterpiece. Perfect for potlucks, picnics, or a nostalgic dessert at home.

Ingredients

Units Scale

For the Pudding:

  • 1 package (3.4 oz) instant vanilla pudding mix
  • 2 cups cold milk
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

For the Layers:

  • 4 large bananas, sliced
  • 2 cups salted peanuts, roughly chopped
  • 1 box (11 oz) vanilla wafers or butter cookies

For Garnish:

  • Crushed peanuts
  • Banana slices
  • Whipped cream

Instructions

1. Make the Pudding:

  1. In a medium bowl, whisk together the instant pudding mix and cold milk for 2 minutes, or until thickened.
  2. In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  3. Gently fold the whipped cream into the pudding until smooth. Chill the mixture for 20-30 minutes.

2. Assemble the Layers:

  1. In a trifle dish, glass bowl, or individual serving cups, spread a layer of pudding on the bottom.
  2. Add a layer of sliced bananas, followed by a layer of vanilla wafers.
  3. Sprinkle a layer of salted peanuts on top.
  4. Repeat the layers, finishing with a layer of pudding on top.

3. Garnish and Serve:

  1. Garnish the top with crushed peanuts, banana slices, and a dollop of whipped cream if desired.
  2. Refrigerate for at least 2 hours (or up to overnight) to allow the flavors to meld.

Notes

  • Make Ahead: This dessert tastes better after resting for a few hours, making it perfect for preparing ahead of time.
  • Substitutions: Use peanut butter cookies instead of vanilla wafers for extra peanut flavor.
  • Variations: Add a drizzle of caramel or melted peanut butter between layers for added richness.
