Description

Salmon Croquettes are crispy, golden-brown patties made with canned or cooked salmon, mixed with herbs, spices, and breadcrumbs, then pan-fried to perfection. A comforting Southern classic that’s quick, easy, and delicious.


Ingredients

  • 1 can (14.75 oz) salmon, drained and flaked
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped parsley
  • 2 eggs, beaten
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons lemon juice
  • 1/4 cup vegetable oil, for frying

Instructions

  1. In a large bowl, combine the flaked salmon, breadcrumbs, onion, parsley, eggs, mayonnaise, mustard, garlic powder, pepper, salt, and lemon juice. Mix until well combined.
  2. Form the mixture into 6-8 patties.
  3. Heat the vegetable oil in a skillet over medium heat.
  4. Fry the salmon patties in batches for 3-4 minutes per side, or until golden brown and crispy.
  5. Remove and drain on paper towels.
  6. Serve warm with your favorite dipping sauce or a squeeze of lemon.

Notes

  • You can substitute canned salmon with cooked fresh salmon if preferred.
  • For a crispier texture, coat the patties in extra breadcrumbs before frying.
  • Serve with tartar sauce or remoulade for extra flavor.
