Description

This refreshing salad is packed with crisp veggies, crunchy nuts, and a flavorful homemade sesame-ginger dressing. Perfect as a side dish or a light meal!

For the Salad:

  • 4 cups mixed greens (romaine, spinach, or Napa cabbage)
  • 1 cup red cabbage, shredded
  • 1 cup carrots, julienned
  • 1 red bell pepper, thinly sliced
  • 1/2 cup cucumber, thinly sliced
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup toasted almonds (or cashews/peanuts)
  • 1 tablespoon sesame seeds

For the Sesame-Ginger Dressing:

  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 1 tablespoon honey (or maple syrup for vegan)
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon sriracha (optional for spice)
  • 1 tablespoon olive oil

 



Instructions

  1. Make the Dressing:

    • In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, ginger, garlic, sriracha, and olive oil until well combined.
  2. Assemble the Salad:

    • In a large bowl, toss together mixed greens, red cabbage, carrots, bell pepper, cucumber, green onions, and cilantro.
  3. Toss & Serve:

    • Drizzle with sesame-ginger dressing and toss gently.
    • Sprinkle with toasted almonds and sesame seeds before serving.
