This Rocky Road Candy is a classic, no-bake treat made with rich chocolate, fluffy marshmallows, and crunchy nuts. It’s super easy to make and perfect for holidays, parties, or just when you’re craving something sweet!

- 2 cups semi-sweet chocolate chips (or chopped chocolate)
- 1 tablespoon butter (or coconut oil)
- 2 cups mini marshmallows
- 1 cup roasted almonds (or walnuts, pecans)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Melt the Chocolate – In a microwave-safe bowl, melt the chocolate chips and butter in 30-second intervals, stirring in between until smooth. (Alternatively, use a double boiler.)
- Add Flavor & Crunch – Stir in the vanilla extract and salt. Then fold in the marshmallows and almonds, making sure everything is evenly coated.
- Shape the Candy – Line an 8×8-inch baking dish with parchment paper. Pour the mixture in and spread it out evenly.
- Chill & Set – Refrigerate for 1-2 hours, or until firm.
- Cut & Serve – Once set, cut into squares or break into chunks. Enjoy!
