- 2 lbs sweet potatoes, peeled and cut into 1-inch cubes

- 1/3 cup grated Parmesan cheese

Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, toss the sweet potato cubes with olive oil, garlic, salt, pepper, and thyme until evenly coated.
- Spread the sweet potatoes in a single layer on the prepared baking sheet.
- Roast for 25–30 minutes, stirring halfway through, until sweet potatoes are tender and lightly browned.
- Remove from oven and sprinkle Parmesan cheese over the hot sweet potatoes. Toss gently to combine and melt the cheese slightly.
- Garnish with chopped parsley if desired and serve warm.
