  • 1/3 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, toss the sweet potato cubes with olive oil, garlic, salt, pepper, and thyme until evenly coated.
  3. Spread the sweet potatoes in a single layer on the prepared baking sheet.
  4. Roast for 25–30 minutes, stirring halfway through, until sweet potatoes are tender and lightly browned.
