- 2 cups fresh or frozen sweet corn (about 4 ears), roasted
- 1 cup cherry tomatoes, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice (about 1 lime)
- 1 tablespoon olive oil
- Salt and black pepper to taste
Instructions
- If using fresh corn, grill or roast ears over medium-high heat until lightly charred. Cut kernels off the cob. If using frozen corn, thaw and sauté in a dry pan until lightly charred.
- In a large bowl, combine corn, tomatoes, bell pepper, onion, jalapeño, and cilantro.
- Drizzle with lime juice and olive oil, then toss to combine.
- Season with salt and pepper to taste.
- Chill for at least 30 minutes before serving to allow flavors to meld.
Notes
- Adjust jalapeño to taste for more or less heat.
- Great served with tortilla chips, tacos, grilled chicken, or fish.
- Can be made a day ahead and stored in the fridge.
