- 2 lbs red potatoes, cut into 1-inch pieces
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary (or thyme)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, chopped (optional for garnish)
Instructions
- Preheat oven to 425°F (220°C).
- In a large bowl, toss red potatoes with olive oil, garlic powder, rosemary, salt, and pepper until evenly coated.
- Spread the potatoes out in a single layer on a baking sheet.
- Roast for 25–30 minutes, flipping halfway through, until golden brown and crispy on the edges.
- Remove from oven and sprinkle with fresh parsley if desired. Serve warm.

- Make sure the potato pieces are uniform in size for even roasting.
- Line the baking sheet with parchment paper for easy cleanup.
