For the Pizza Dough (optional, or use store-bought):

  • 2 1/4 tsp (1 packet) active dry yeast
  • 3/4 cup (180 ml) warm water
  • 1 tsp sugar
  • 2 cups (250 g) all-purpose flour
  • 1/2 tsp salt
  • 1 tbsp olive oil

For the Roasted Garlic Sauce:

  • 1 head of garlic
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 1 cup (240 ml) whole milk
  • 1/4 cup (25 g) grated Parmesan cheese
  • 1/4 tsp salt
  • 1/4 tsp black pepper

For the Toppings:

  • 1 cup (150 g) cooked chicken, shredded or diced
  • 2 cups (200 g) shredded mozzarella cheese
  • 1/2 cup (60 g) ricotta cheese (optional, for dollops)
  • 1/4 cup (25 g) grated Parmesan cheese
  • 1/2 tsp Italian seasoning
  • Fresh basil or parsley, for garnish

Instructions

1. Prepare the Pizza Dough (if making from scratch):

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until foamy.
  2. In a large mixing bowl, combine the flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for 5-7 minutes until smooth. Place it in a lightly oiled bowl, cover, and let it rise for 1 hour or until doubled in size.

2. Roast the Garlic:

  1. Preheat the oven to 400°F (200°C).
  2. Slice the top off the garlic head, drizzle with olive oil, and wrap it in aluminum foil. Roast for 30-35 minutes until soft and golden. Let cool, then squeeze out the roasted garlic cloves.

3. Make the Roasted Garlic Sauce:

  1. In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
  2. Gradually whisk in the milk until smooth. Add the roasted garlic, Parmesan cheese, salt, and pepper. Simmer for 2-3 minutes until thickened. Remove from heat.

4. Assemble the Pizza:

  1. Preheat the oven to 475°F (245°C). If using a pizza stone, place it in the oven to preheat.
  2. Roll out the pizza dough into a 12-inch circle on a floured surface. Place it on parchment paper or a pizza pan.
  3. Spread the roasted garlic sauce evenly over the dough. Top with shredded chicken, mozzarella cheese, dollops of ricotta (if using), and Parmesan cheese. Sprinkle with Italian seasoning.

5. Bake the Pizza:

  1. Transfer the pizza to the oven and bake for 10-12 minutes, or until the crust is golden and the cheese is bubbly.

6. Garnish and Serve:

  • Remove from the oven and garnish with fresh basil or parsley. Slice and serve hot.
