- 1 whole chicken (about 1.5 kg)
- 4 tbsp olive oil
- 6 cloves garlic, minced
- 2 tsp salt
- 1 tsp black pepper
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 tbsp fresh parsley, chopped
- 1 lemon, halved
- 1 onion, quartered
- 4 sprigs of rosemary and thyme (for cavity)
Instructions
- Preheat oven to 200°C (400°F).
- In a small bowl, mix olive oil, minced garlic, salt, pepper, and chopped herbs.
- Pat the chicken dry with paper towels. Rub the herb mixture all over the chicken, including under the skin.
- Stuff the cavity with lemon halves, onion, and herb sprigs.
- Tie the legs together with kitchen twine and tuck the wings under.
- Place the chicken on a roasting rack in a pan and roast for about 1 hour 20 minutes, or until internal temperature reaches 75°C (165°F).
- Let the chicken rest for 10–15 minutes before carving and serving.
Notes
- Use a meat thermometer to ensure perfect doneness.
- Baste the chicken with pan juices halfway through cooking for extra flavor.
- Leftovers are great for sandwiches or salads.
