Description

Ritz S’mores Cookies are a fun, no-bake treat that combines the salty crunch of Ritz crackers with gooey marshmallows and melty chocolate. Perfect for a quick dessert or snack, these sweet and salty bites are always a hit with kids and adults alike!

  • 24 Ritz crackers
  • 12 large marshmallows, halved
  • 6 ounces milk or dark chocolate (chopped or chips)
  • 1 teaspoon coconut oil (optional, for smoother chocolate)

Instructions

  1. Prepare the Marshmallows:
    Preheat your oven broiler or use a kitchen torch. Line a baking sheet with parchment paper and place 12 Ritz crackers, salted side down. Place a halved marshmallow on top of each cracker.
  2. Toast the Marshmallows:
    Broil on low for 1-2 minutes, watching closely, until the marshmallows are golden brown and gooey. Alternatively, toast the marshmallows with a kitchen torch.
  3. Top with Crackers:
    Immediately press another Ritz cracker on top of each marshmallow, salted side out, to create a sandwich. Let cool slightly.
  4. Melt the Chocolate:
    In a microwave-safe bowl, melt the chocolate in 20-second intervals, stirring between each, until smooth. Add the coconut oil if using.
  5. Dip the Cookies:
    Dip each Ritz sandwich halfway into the melted chocolate, letting the excess drip off. Place on a parchment-lined tray.
  6. Chill and Set:
    Refrigerate for 15-20 minutes or until the chocolate is set.
  7. Serve and Enjoy:
    Serve immediately or store in an airtight container for up to 3 days.
