Description
Rhubarb Slush is a refreshing frozen drink made with tangy rhubarb, citrus juice, and a splash of soda. It’s the perfect make-ahead beverage for warm weather gatherings or a relaxing summer afternoon.

- 5 cups chopped rhubarb
- 4 cups water
- 2 cups granulated sugar
- 1/2 cup lemon juice
- 1/2 cup orange juice
- 2 cups ginger ale or lemon-lime soda (for serving)
Instructions
- In a large saucepan, combine rhubarb, water, and sugar. Bring to a boil, then reduce heat and simmer for 15–20 minutes until rhubarb is very soft.
- Remove from heat and strain the mixture through a fine mesh sieve or cheesecloth, discarding the solids.
- Stir in lemon juice and orange juice into the rhubarb liquid.
- Pour the mixture into a freezer-safe container and freeze for at least 8 hours or overnight, stirring occasionally if possible to promote even freezing.
- To serve, scrape or scoop the slush into glasses and top each with a splash of ginger ale or lemon-lime soda. Stir gently and serve immediately.
Notes
- For an adult version, add a splash of vodka or gin before freezing or just before serving.
- Adjust sugar to taste based on the tartness of your rhubarb.
- Store slush in the freezer for up to 1 month; stir well before serving.
