Description

These Reese’s Pieces Chocolate Chip Cookie Bars are a chewy, indulgent treat that combines chocolate chips and peanut butter-flavored Reese’s Pieces in a classic cookie bar. Perfect for sharing at gatherings or as a fun dessert, these bars are easy to make and irresistible!

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 1/4 cups Reese’s Pieces, plus extra for topping

Instructions

  • Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and lightly spray with nonstick cooking spray​.

  • Prepare the Dough:

    • In a large bowl or the bowl of a stand mixer, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.
    • Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
  • Combine Dry Ingredients:

    • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined​.
  • Add Mix-Ins:

    • Fold in the chocolate chips and 1 1/4 cups of Reese’s Pieces, saving a handful for topping.
  • Assemble and Bake:

    • Spread the cookie dough evenly into the prepared pan. Sprinkle any reserved Reese’s Pieces over the top.
    • Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out mostly clean.
  • Cool and Serve:

    • Allow the bars to cool completely in the pan before lifting them out using the parchment paper. Cut into squares and serve

Notes

  • Storage: Store in an airtight container at room temperature for up to 4 days or in the refrigerator for up to a week.
  • Freezing: These bars freeze well. Wrap individual bars in plastic wrap, then store in a freezer-safe bag for up to 3 months.
