Reese’s Peanut Butter Cup Stuffed Cookies

Ingredients

For the Cookie Dough:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour

  • 12-16 mini Reese’s peanut butter cups, unwrapped

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Cream Butter and Sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add Wet Ingredients: Beat in the peanut butter, egg, and vanilla extract until well combined.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour and baking soda. Gradually add this to the wet mixture, mixing until just combined.
  5. Form Cookies: Take a small amount of dough and flatten it in your hand. Place a mini Reese’s cup in the center and wrap the dough around it, forming a ball. Make sure the Reese’s cup is completely covered by the dough.
  6. Bake: Place the dough balls on the prepared baking sheet, spaced about 2 inches apart. Bake for 10-12 minutes, or until the cookies are lightly golden.
  7. Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
