Instructions
1. Mix the Base Ingredients:
- In a large mixing bowl, combine the peanut butter, melted butter, and powdered sugar. Mix until smooth and well combined.
- Gently fold in the crispy rice cereal and chopped Reese’s Peanut Butter Cups.
2. Shape the Bites:
- Scoop about 1 tablespoon of the mixture and roll it into a ball using your hands.
- Place the balls on a baking sheet lined with parchment paper. Freeze for 15-20 minutes to firm up.
3. Melt the Chocolate:
- In a microwave-safe bowl, melt the chocolate chips and coconut oil (if using) in 20-second intervals, stirring after each, until smooth and fully melted.
- Alternatively, melt the chocolate in a double boiler.
4. Coat the Bites:
- Using a fork or toothpick, dip each ball into the melted chocolate, ensuring it’s fully coated.
