Instructions
- Preheat oven to 400°F (200°C) or heat oil in a deep fryer to 350°F (175°C) if frying.
- Wash and scrub potatoes well. Leave the skin on for color and texture.
- Using a mandoline or sharp knife, slice potatoes very thinly (about 1/8 inch or thinner).
- If baking, toss the slices in olive oil and lay them in a single layer on parchment-lined baking sheets.
- Bake for 15–20 minutes, flipping halfway, until crispy and golden. Watch carefully to prevent burning.
- If frying, work in small batches to fry slices for 2–3 minutes until golden and crisp. Drain on paper towels.
- Sprinkle with salt and additional seasonings while warm.
- Let cool and serve immediately or store in an airtight container for up to 2 days.
