Description

Raspberry Truffles are rich, velvety chocolate confections infused with natural raspberry flavor. These decadent bite-sized treats are perfect for gifting, special occasions, or simply indulging your sweet tooth.

Ingredients

Units Scale
  • 8 oz semi-sweet or dark chocolate, finely chopped
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1/4 cup raspberry preserves or puree (seedless)
  • 1/2 teaspoon vanilla extract
  • Cocoa powder, powdered sugar, or melted chocolate for coating

Instructions

  1. In a small saucepan, heat the heavy cream and butter over medium heat until just simmering.
  2. Remove from heat and pour over chopped chocolate in a heat-safe bowl. Let sit for 2–3 minutes, then stir until smooth.
  3. Stir in raspberry preserves and vanilla extract until fully combined.
  4. Refrigerate the mixture for at least 2 hours or until firm enough to scoop.
  5. Using a small scoop or spoon, roll the mixture into 1-inch balls.
  6. Roll truffles in cocoa powder, powdered sugar, or dip in melted chocolate for a coated finish.
  7. Refrigerate until ready to serve. Let sit at room temperature for a few minutes before enjoying.

Notes

  • Use freeze-dried raspberry powder for a stronger raspberry flavor if desired.
  • Store truffles in an airtight container in the fridge for up to 1 week.
  • Decorate with a drizzle of white chocolate or pink sprinkles for festive flair.
