Instructions
- In a small saucepan, heat the heavy cream and butter over medium heat until just simmering.
- Remove from heat and pour over chopped chocolate in a heat-safe bowl. Let sit for 2–3 minutes, then stir until smooth.
- Stir in raspberry preserves and vanilla extract until fully combined.
- Refrigerate the mixture for at least 2 hours or until firm enough to scoop.
- Using a small scoop or spoon, roll the mixture into 1-inch balls.
- Roll truffles in cocoa powder, powdered sugar, or dip in melted chocolate for a coated finish.
- Refrigerate until ready to serve. Let sit at room temperature for a few minutes before enjoying.
Notes
- Use freeze-dried raspberry powder for a stronger raspberry flavor if desired.
- Store truffles in an airtight container in the fridge for up to 1 week.
