Description

This Raspberry Chia Dessert is a refreshing, no-bake treat made with juicy raspberries, creamy coconut milk, and chia seeds. It’s naturally sweetened, rich in fiber and omega-3s, and perfect as a light dessert, healthy snack, or even a fruity breakfast!


Ingredients

  • 1 1/2 cups fresh or frozen raspberries

  • 1-2 tbsp maple syrup or honey (to taste)

  • 1 tsp vanilla extract

  • 1 cup unsweetened coconut milk (or any milk of choice)

  • 1/4 cup chia seeds

  • Optional toppings: fresh raspberries, coconut flakes, granola, mint leaves


Instructions

  1. Mash the Raspberries:

    • In a bowl, mash the raspberries with a fork until mostly smooth (leave some chunks for texture).

    • Stir in maple syrup or honey and vanilla extract.

  2. Add Chia & Milk:

    • Stir in coconut milk until combined.

    • Add chia seeds and mix well.

  3. Chill:

    • Cover and refrigerate for at least 2 hours, or overnight, until thickened to a pudding-like texture.

    • Stir once after the first 30 minutes to prevent clumping.

  4. Serve:

    • Spoon into serving cups or jars.

    • Top with fresh berries, coconut flakes, or granola if desired.


Notes

  • Adjust sweetness depending on your preference and the tartness of your berries.

  • Use almond milk or oat milk for a different flavor twist.

  • Can be stored in the fridge for up to 4 days—great for meal prep!
