This Raspberry Chia Dessert is a refreshing, no-bake treat made with juicy raspberries, creamy coconut milk, and chia seeds. It’s naturally sweetened, rich in fiber and omega-3s, and perfect as a light dessert, healthy snack, or even a fruity breakfast!
Ingredients

1 1/2 cups fresh or frozen raspberries

1-2 tbsp maple syrup or honey (to taste)

1 tsp vanilla extract

1 cup unsweetened coconut milk (or any milk of choice)

1/4 cup chia seeds

Optional toppings: fresh raspberries, coconut flakes, granola, mint leaves
Instructions

Mash the Raspberries:

In a bowl, mash the raspberries with a fork until mostly smooth (leave some chunks for texture).

Stir in maple syrup or honey and vanilla extract.

Add Chia & Milk:

Stir in coconut milk until combined.

Add chia seeds and mix well.

Chill:

Cover and refrigerate for at least 2 hours, or overnight, until thickened to a pudding-like texture.

Stir once after the first 30 minutes to prevent clumping.

Spoon into serving cups or jars.

Top with fresh berries, coconut flakes, or granola if desired.
