- 2 large eggs
- 1 3/4 cups milk
- 1/3 cup vegetable oil or melted butter

- Food coloring (red, orange, yellow, green, blue, purple)
- Nonstick cooking spray
Instructions
- Preheat waffle iron according to manufacturer’s instructions and spray with nonstick cooking spray.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, whisk together eggs, milk, oil (or butter), and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
- Divide the batter evenly into 6 small bowls. Add a few drops of different food coloring to each bowl to create red, orange, yellow, green, blue, and purple batters.
- Spoon small amounts of each colored batter into the waffle iron in a circular pattern or in stripes to create a rainbow effect.
- Close the lid and cook according to waffle iron directions until golden and crisp.
- Carefully remove waffles and serve warm with syrup, whipped cream, or fresh fruit.
