Ingredients

Scale

For the Soup:

  • 1 liter (4 cups) chicken broth (low sodium)
  • 500 ml (2 cups) water
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1/2 teaspoon white pepper (optional, for heat)

For the Wontons:

  • 2025 store-bought wontons (pork, chicken, or shrimp)
  • 100 g (1 cup) sliced mushrooms (shiitake or button)
  • 1 medium carrot, julienned or thinly sliced
  • 2 cups baby bok choy or spinach, roughly chopped
  • 2 green onions, thinly sliced

For Garnish:

  • Fresh cilantro, chopped
  • Extra green onions
  • Chili oil or crispy chili flakes (optional)

Instructions

🍜 Prepare the Broth:

  1. Heat the Broth:

    • In a large pot, combine chicken broth, water, soy sauce, rice vinegar, ginger, garlic, sesame oil, and white pepper.
    • Bring to a gentle boil over medium heat.
  2. Add Vegetables:

    • Add the mushrooms, carrots, and bok choy (or spinach).
    • Cook for 3-4 minutes, until vegetables are slightly tender.

🥟 Cook the Wontons:

  1. Add Wontons to the Broth:

    • Gently add the wontons to the soup. Stir carefully to avoid breaking them.
    • Let the wontons simmer for 5-7 minutes, or until they float to the top and are fully cooked.
  2. Final Touches:

    • Stir in the green onions. Adjust the seasoning with more soy sauce or a pinch of salt if needed.

🍽️ Serving the Soup:

  1. Ladle and Garnish:
    • Ladle the soup into bowls, making sure each serving has a good mix of broth, vegetables, and wontons.
    • Garnish with fresh cilantro, extra green onions, and a drizzle of chili oil if you like some heat.

Notes

  • For homemade wontons: You can make a quick filling with ground pork, shrimp, green onions, soy sauce, and a pinch of grated ginger.
  • Storage: The soup is best served fresh but can be stored in the refrigerator for 1-2 days. Reheat gently to avoid overcooking the wontons.
