Description
Queso Fundido Taquitos are crispy, cheesy rolled tacos filled with a blend of melted cheese, chorizo, and roasted peppers, inspired by the classic Mexican queso fundido dip.

- 1/2 lb Mexican chorizo, casing removed
- 1/2 cup diced onion
- 1/2 cup roasted poblano or bell pepper, chopped
- 1 1/2 cups shredded Monterey Jack cheese
- 1 cup shredded Oaxaca or mozzarella cheese
- 10 small corn tortillas
- Vegetable oil, for frying or brushing
- Optional: fresh cilantro, sour cream, or salsa for serving
Instructions
- In a skillet over medium heat, cook chorizo and onion until browned and cooked through, about 6–8 minutes. Stir in roasted peppers and remove from heat.
- In a bowl, combine cooked chorizo mixture with cheeses. Set aside.
- Warm tortillas in a microwave or skillet until pliable.
- Spoon about 2 tbsp of filling onto each tortilla and roll tightly into taquitos. Secure with a toothpick if needed.
- For frying: Heat about 1/2 inch of oil in a skillet over medium-high heat. Fry taquitos in batches, turning occasionally, until golden and crispy, about 2–3 minutes per side. Drain on paper towels.
- For baking: Place taquitos seam-side down on a baking sheet, brush with oil, and bake at 425°F (220°C) for 15–20 minutes or until crisp and golden.
- Serve hot with your choice of garnishes.
Notes
- Use vegetarian chorizo for a meatless version.
- Make ahead and reheat in the oven for easy entertaining.
- Serve with guacamole or queso dip for extra indulgence.
