Instructions
- In a mason jar or airtight container, combine oats, milk, pumpkin puree, maple syrup, vanilla, pumpkin pie spice, salt, and Greek yogurt if using.
- Stir until fully combined and oats are submerged in liquid.
- Seal the container and refrigerate overnight or for at least 4 hours.
- In the morning, stir oats and add a splash of milk if needed to loosen. Top with nuts, granola, or whipped cream if desired.

- Use canned pumpkin puree, not pumpkin pie filling.
