Description

This Pumpkin Pecan Cobbler is the ultimate warm, gooey, and spiced fall dessert! For the pumpkin cake base:

  • 1 cup (125g) all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (150g) granulated sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp cloves (or use 1 tsp pumpkin spice blend!)
  • 1/2 cup (120ml) pumpkin purée (not pumpkin pie filling!)
  • 1/4 cup (60ml) milk
  • 2 tbsp melted butter
  • 1 1/2 tsp vanilla extract

For the pecan topping:

  • 1/2 cup (100g) brown sugar, packed
  • 1/2 cup (50g) chopped pecans

For the magic caramel sauce:

  • 1 1/2 cups (360ml) hot water

 



Instructions

Step 1: Prepare the batter

  1. Preheat oven to 350°F (175°C). Grease a 9-inch baking dish.
  2. In a bowl, whisk together flour, baking powder, salt, sugar, cinnamon, nutmeg, ginger, and cloves.
  3. Stir in pumpkin purée, milk, melted butter, and vanilla until combined.
  4. Spread the batter evenly into the greased baking dish.

Step 2: Add the pecan topping

  1. Sprinkle brown sugar and chopped pecans evenly over the pumpkin batter.

Step 3: Pour the magic sauce

  1. Slowly pour hot water over the entire batter. Do not stir!
  2. The water will create a self-saucing effect, forming a gooey caramel sauce underneath as it bakes.

Step 4: Bake and serve

  1. Bake for 35-40 minutes, until the top is set and golden brown but the bottom is still soft and saucy.
  2. Let it cool for 5-10 minutes before serving.
  3. Spoon out warm portions, making sure to get some of the gooey sauce from the bottom.
  4. Serve with vanilla ice cream or whipped cream for the perfect finishing touch!

  • Want it extra rich? Swap milk for heavy cream in the batter.
  • Prefer walnuts? Substitute pecans for chopped walnuts.
  • Spicier? Increase the cinnamon and nutmeg for a bolder flavor.
  • No pumpkin? Try using sweet potato purée as an alternative.
