Description

This protein-packed treat combines crunchy cereal, creamy peanut butter, chocolate, and a coating of protein powder and powdered sugar. It’s a guilt-free twist on a nostalgic favorite that’s great for snacking or post-workout fuel.

Ingredients

Units Scale
  • 6 cups (180 g) Rice Chex cereal (or your favorite similar cereal)
  • 1/2 cup (120 g) creamy peanut butter
  • 1/2 cup (90 g) semi-sweet chocolate chips
  • 1/4 cup (60 g) unsalted butter
  • 1 cup (100 g) powdered sugar
  • 1/2 cup (60 g) vanilla or chocolate protein powder

Instructions

  • Prepare the cereal:
    • Place the Rice Chex cereal in a large mixing bowl.
  • Melt the peanut butter and chocolate:
    • In a microwave-safe bowl, combine the peanut butter, chocolate chips, and butter. Microwave in 30-second intervals, stirring between each, until the mixture is smooth and fully melted.
  • Coat the cereal:
    • Pour the melted mixture over the cereal. Gently toss with a spatula until the cereal is evenly coated.
  • Prepare the coating:
    • In a large resealable plastic bag, combine the powdered sugar and protein powder. Shake the bag to mix.
  • Coat the cereal:
    • Add the chocolate-coated cereal to the bag with the powdered sugar mixture. Seal the bag and shake vigorously until the cereal is well-coated.
  • Serve:
    • Pour the coated cereal onto a baking sheet lined with parchment paper and let it cool for 15 minutes. Store in an airtight container.

Notes

  • For a lower sugar option, reduce the powdered sugar or use a sugar-free substitute.
  • Customize the flavor by using different protein powder flavors, like cookies and cream or peanut butter.
  • Add-ins like mini chocolate chips, chopped nuts, or dried fruit can enhance the mix.
