- 6 cups (180 g) Rice Chex cereal (or your favorite similar cereal)
- 1/2 cup (120 g) creamy peanut butter
- 1/2 cup (90 g) semi-sweet chocolate chips
- 1/4 cup (60 g) unsalted butter
- 1 cup (100 g) powdered sugar
- 1/2 cup (60 g) vanilla or chocolate protein powder
Instructions
- Prepare the cereal:
- Place the Rice Chex cereal in a large mixing bowl.
- Melt the peanut butter and chocolate:
- In a microwave-safe bowl, combine the peanut butter, chocolate chips, and butter. Microwave in 30-second intervals, stirring between each, until the mixture is smooth and fully melted.
- Coat the cereal:
- Pour the melted mixture over the cereal. Gently toss with a spatula until the cereal is evenly coated.
- Prepare the coating:
- In a large resealable plastic bag, combine the powdered sugar and protein powder. Shake the bag to mix.
- Coat the cereal:
- Add the chocolate-coated cereal to the bag with the powdered sugar mixture. Seal the bag and shake vigorously until the cereal is well-coated.
- Serve:
- Pour the coated cereal onto a baking sheet lined with parchment paper and let it cool for 15 minutes. Store in an airtight container.
