Scale
- 10 cups popped popcorn (about 1/2 cup unpopped kernels)
- 1 cup pecans, roughly chopped
- 1 cup light brown sugar, packed
- 1/2 cup unsalted butter
- 1/4 cup light corn syrup
- 1/4 tsp baking soda
- 1/2 tsp vanilla extract
- 1/4 tsp salt
Instructions
1. Prepare the Popcorn and Pecans:
- Preheat your oven to 250°F (120°C). Line a large baking sheet with parchment paper or a silicone baking mat.
- Spread the popped popcorn and pecans evenly on the prepared baking sheet.
2. Make the Praline Caramel Sauce:
- In a medium saucepan over medium heat, combine the brown sugar, butter, corn syrup, and salt. Stir continuously until the butter melts and the mixture begins to bubble.
- Let the mixture boil for 3-4 minutes without stirring.
- Remove the saucepan from heat and quickly stir in the baking soda and vanilla extract. The mixture will foam slightly.
3. Coat the Popcorn:
- Pour the hot praline caramel sauce over the popcorn and pecans. Use a spatula to gently toss and coat everything evenly.
4. Bake:
- Place the baking sheet in the preheated oven and bake for 45 minutes, stirring every 15 minutes to ensure even coating.
- Remove from the oven and let the popcorn cool completely on the baking sheet. The coating will harden as it cools.
5. Serve:
- Once cooled, break the praline popcorn into clusters. Serve immediately or store in an airtight container for up to 5 days.
Notes
- Nut Alternatives: Swap pecans for almonds, walnuts, or cashews for a different flavor.
- No Corn Syrup: Replace with honey or maple syrup for a natural alternative, though the texture may vary slightly.
- Gifting Idea: Package the praline popcorn in festive bags or tins for an easy homemade gift.
