This soup is made with potstickers simmered in a savory broth, complemented by vibrant vegetables and aromatic seasonings. Perfect for a cozy weeknight dinner or as a unique appetizer!

Ingredients

  • 1 tbsp sesame oil (or vegetable oil)
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tsp ginger, minced
  • 6 cups chicken broth (or vegetable broth for a vegetarian option)
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp chili garlic sauce or sriracha (optional, for heat)
  • 1216 frozen potstickers or dumplings (pork, chicken, or vegetarian)
  • 1 cup napa cabbage or bok choy, shredded
  • 1 cup carrots, julienned or thinly sliced
  • 1/2 cup green onions, sliced (plus extra for garnish)
  • 1/2 cup mushrooms, sliced (optional)
  • Salt and pepper, to taste
  • Fresh cilantro or sesame seeds (optional, for garnish)

Instructions

  1. Sauté Aromatics:
    • Heat sesame oil in a large pot over medium heat. Add the diced onion and sauté until softened, about 3-4 minutes.
    • Stir in the garlic and ginger and cook for 1 minute until fragrant.
  2. Make the Broth:
    • Add the chicken broth, soy sauce, rice vinegar, and chili garlic sauce (if using). Stir well and bring to a gentle simmer.
  3. Cook the Potstickers:
    • Carefully add the frozen potstickers to the simmering broth. Let them cook for 5-7 minutes, or according to the package instructions, until they are tender and cooked through.
  4. Add the Vegetables:
    • Stir in the shredded cabbage, carrots, mushrooms (if using), and green onions. Simmer for an additional 3-5 minutes, until the vegetables are tender but still vibrant.
  5. Season and Serve:
    • Taste the soup and adjust the seasoning with salt and pepper as needed.
    • Ladle the soup into bowls, ensuring each serving gets a generous portion of broth, potstickers, and vegetables.
  6. Garnish:
    • Top with fresh cilantro, extra green onions, sesame seeds, or a drizzle of chili oil for added flavor.

  • Customizable Veggies: Add baby spinach, snap peas, or broccoli for extra greens.
  • Potsticker Options: Use any type of frozen dumplings, such as pork, chicken, shrimp, or vegetarian.
  • Thicker Broth: For a slightly thicker soup, mix 1 tbsp cornstarch with 2 tbsp water and stir it into the broth before adding the potstickers.
