Description

Potato Skin Tacos are a creative twist on classic tacos, using crispy potato skins as the shell and stuffing them with seasoned meat, cheese, and toppings for a hearty and fun appetizer or meal.


Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning mix
  • 2/3 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes clean and pierce with a fork. Bake for 45–50 minutes or until tender.
  2. Let potatoes cool slightly, then cut in half lengthwise and scoop out most of the flesh, leaving about 1/4-inch thick shells.
  3. Brush potato skins with olive oil and season with salt and pepper. Return to oven and bake for 10–15 minutes until crispy.
  4. Meanwhile, cook ground beef in a skillet over medium heat until browned. Drain excess fat.
  5. Add taco seasoning and water to the meat. Simmer for 5–7 minutes until thickened.
  6. Fill each crispy potato skin with taco meat and top with shredded cheese. Return to oven for 5 minutes to melt cheese.
  7. Remove from oven and top with sour cream, diced tomatoes, green onions, and cilantro if using.
  8. Serve warm.

Notes

  • You can prepare the potato skins ahead and reheat them before filling.
  • Use any of your favorite taco toppings like avocado, jalapeños, or salsa.
  • Try using sweet potatoes for a different flavor twist.
