Potato Skin Tacos are a creative twist on classic tacos, using crispy potato skins as the shell and stuffing them with seasoned meat, cheese, and toppings for a hearty and fun appetizer or meal.

- 4 large russet potatoes
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound ground beef or turkey
- 1 packet taco seasoning mix
- 2/3 cup water
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup diced tomatoes
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro (optional)
Instructions
- Preheat oven to 400°F (200°C). Scrub potatoes clean and pierce with a fork. Bake for 45–50 minutes or until tender.
- Let potatoes cool slightly, then cut in half lengthwise and scoop out most of the flesh, leaving about 1/4-inch thick shells.
- Brush potato skins with olive oil and season with salt and pepper. Return to oven and bake for 10–15 minutes until crispy.
- Meanwhile, cook ground beef in a skillet over medium heat until browned. Drain excess fat.
- Add taco seasoning and water to the meat. Simmer for 5–7 minutes until thickened.
- Fill each crispy potato skin with taco meat and top with shredded cheese. Return to oven for 5 minutes to melt cheese.
- Remove from oven and top with sour cream, diced tomatoes, green onions, and cilantro if using.
- Serve warm.
Notes
- You can prepare the potato skins ahead and reheat them before filling.
- Use any of your favorite taco toppings like avocado, jalapeños, or salsa.
- Try using sweet potatoes for a different flavor twist.
