Description

  • 2 cups crushed potato chips (use your favorite flavor)
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • Cooking spray or melted butter (for extra crispiness)

Instructions

  1. Preheat oven: Set oven to 400°F (200°C). Line a baking sheet with parchment paper or a wire rack for extra crispiness.
  2. Prepare coating: Crush potato chips in a bag or food processor. In one bowl, mix flour with garlic powder, onion powder, pepper, and paprika. In another bowl, whisk eggs and milk together.
  3. Coat the chicken: Dredge each chicken piece in flour, dip into the egg mixture, then press into the crushed chips, coating well.
  4. Bake: Place coated chicken on the baking sheet. Lightly spray with cooking spray or drizzle with melted butter. Bake for 20-25 minutes or until golden brown and cooked through (internal temp: 165°F/75°C).
