- 1 small onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 bell pepper, diced
- 1 zucchini, chopped
- 3 cups cabbage, shredded
- 1 (14.5 oz) can diced tomatoes (with juice)
- 6 cups vegetable broth (or water)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp Italian seasoning
- 1/2 tsp turmeric (optional, for anti-inflammatory benefits)
- 1/2 tsp red pepper flakes (optional, for metabolism boost)
- 2 cups fresh spinach or kale
- 1 tbsp lemon juice
- 1/4 cup fresh parsley, chopped
Instructions
Step 1: Sauté the Aromatics
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, and celery. Sauté for 5 minutes until softened.
Step 2: Add Vegetables & Simmer
- Stir in bell pepper, zucchini, cabbage, diced tomatoes, vegetable broth, salt, black pepper, Italian seasoning, turmeric, and red pepper flakes.
- Bring to a boil, then reduce heat to low and let simmer for 20-25 minutes, until vegetables are tender.
Step 3: Add Greens & Finish
- Stir in spinach or kale and let cook for 2 minutes, until wilted.
- Remove from heat and add lemon juice and fresh parsley.
Step 4: Serve & Enjoy
- Serve warm and enjoy as a light meal or detox soup.
Notes
