Description

This Weight Loss Soup is a low-calorie, nutrient-dense meal packed with fiber-rich vegetables, herbs, and spices to help boost metabolism and promote digestion. It’s hearty, satisfying, and perfect for meal prep or a light, healthy lunch or dinner!


Ingredients

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 bell pepper, diced
  • 1 zucchini, chopped
  • 3 cups cabbage, shredded
  • 1 (14.5 oz) can diced tomatoes (with juice)
  • 6 cups vegetable broth (or water)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1/2 tsp turmeric (optional, for anti-inflammatory benefits)
  • 1/2 tsp red pepper flakes (optional, for metabolism boost)
  • 2 cups fresh spinach or kale
  • 1 tbsp lemon juice
  • 1/4 cup fresh parsley, chopped



Instructions

Step 1: Sauté the Aromatics

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery. Sauté for 5 minutes until softened.

Step 2: Add Vegetables & Simmer

  1. Stir in bell pepper, zucchini, cabbage, diced tomatoes, vegetable broth, salt, black pepper, Italian seasoning, turmeric, and red pepper flakes.
  2. Bring to a boil, then reduce heat to low and let simmer for 20-25 minutes, until vegetables are tender.

Step 3: Add Greens & Finish

  1. Stir in spinach or kale and let cook for 2 minutes, until wilted.
  2. Remove from heat and add lemon juice and fresh parsley.

Step 4: Serve & Enjoy

  1. Serve warm and enjoy as a light meal or detox soup.

Notes

  • Add Protein: Toss in chickpeas, lentils, or shredded chicken.
