Description

Poppy Seed Chicken Casserole is a creamy, cheesy comfort food favorite made with tender chicken, a buttery Ritz cracker topping, and a sprinkle of poppy seeds for a little crunch. It’s cozy, simple, and perfect for busy weeknights or feeding a crowd.


Ingredients

  • 4 cups cooked shredded or diced chicken (rotisserie works great)

  • 1 can (10.5 oz) cream of chicken soup

  • 1 cup sour cream

  • 1 cup shredded cheddar cheese (optional, for extra richness)

  • 1 tablespoon poppy seeds

  • 1 sleeve Ritz crackers (about 30), crushed

  • 4 tablespoons butter, melted

  • Salt and pepper, to taste


Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a large bowl, mix chicken, cream of chicken soup, sour cream, cheddar cheese (if using), poppy seeds, salt, and pepper.

  3. Spread the mixture into a greased 9×13-inch baking dish.

  4. In a small bowl, combine crushed Ritz crackers and melted butter.

  5. Sprinkle the cracker mixture evenly over the top of the casserole.

  6. Bake for 25–30 minutes, or until hot and bubbly with a golden top.

  7. Let cool for a few minutes before serving. Serve over rice, noodles, or with a side of vegetables.

 



Notes

  • You can substitute Greek yogurt for sour cream.

  • Add a splash of chicken broth if you like it saucier.

  • Great for making ahead—just assemble, cover, and refrigerate until ready to bake.
