Ingredients

4 cups cooked shredded or diced chicken (rotisserie works great)

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 cup shredded cheddar cheese (optional, for extra richness)

1 tablespoon poppy seeds

1 sleeve Ritz crackers (about 30), crushed

4 tablespoons butter, melted

Salt and pepper, to taste
Instructions

Preheat oven to 350°F (175°C).

In a large bowl, mix chicken, cream of chicken soup, sour cream, cheddar cheese (if using), poppy seeds, salt, and pepper.

Spread the mixture into a greased 9×13-inch baking dish.

In a small bowl, combine crushed Ritz crackers and melted butter.

Sprinkle the cracker mixture evenly over the top of the casserole.

Bake for 25–30 minutes, or until hot and bubbly with a golden top.

Let cool for a few minutes before serving. Serve over rice, noodles, or with a side of vegetables.
