Description

Light, airy popovers that are crisp on the outside and soft on the inside. Perfect for breakfast or as a side for soups and roasts.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole milk
  • 2 large eggs
  • 1/2 tsp salt
  • 1 tbsp unsalted butter, melted
  • Butter or oil for greasing the pan

Instructions

  1. Preheat your oven to 450°F (230°C). Place a popover pan or muffin tin in the oven to heat.
  2. In a bowl, whisk together the flour and salt.
  3. In another bowl, whisk the eggs and milk until frothy. Gradually whisk in the melted butter.
  4. Combine the wet and dry ingredients, whisking until smooth.
  5. Carefully remove the hot pan from the oven and grease each cup with butter or oil.
  6. Fill each cup about halfway with batter.
  7. Bake for 20 minutes without opening the oven door. Reduce heat to 350°F (175°C) and bake for an additional 15-20 minutes until puffed and golden brown.
  8. Remove from the oven, pierce each popover with a knife to let steam escape, and serve warm.

Notes

  • Make sure your eggs and milk are at room temperature for best results.
  • Do not open the oven door during the first baking phase to prevent collapse.
  • Serve immediately for maximum crispness.
