Description
Light, airy popovers that are crisp on the outside and soft on the inside. Perfect for breakfast or as a side for soups and roasts.

- 1 cup all-purpose flour
- 1 cup whole milk
- 2 large eggs
- 1/2 tsp salt
- 1 tbsp unsalted butter, melted
- Butter or oil for greasing the pan
Instructions
- Preheat your oven to 450°F (230°C). Place a popover pan or muffin tin in the oven to heat.
- In a bowl, whisk together the flour and salt.
- In another bowl, whisk the eggs and milk until frothy. Gradually whisk in the melted butter.
- Combine the wet and dry ingredients, whisking until smooth.
- Carefully remove the hot pan from the oven and grease each cup with butter or oil.
- Fill each cup about halfway with batter.
- Bake for 20 minutes without opening the oven door. Reduce heat to 350°F (175°C) and bake for an additional 15-20 minutes until puffed and golden brown.
- Remove from the oven, pierce each popover with a knife to let steam escape, and serve warm.
Notes
- Make sure your eggs and milk are at room temperature for best results.
- Do not open the oven door during the first baking phase to prevent collapse.
- Serve immediately for maximum crispness.
