Poor Man’s Husband Casserole is a budget-friendly, comforting casserole made with layers of ground beef, pasta, creamy tomato sauce, and melted cheese. - 1 lb ground beef
- 1 small onion, diced
- 1 tsp garlic powder
- Salt and pepper, to taste
- 1 (15 oz) can tomato sauce
- 1 (10 oz) can cream of mushroom soup
- 1/2 cup sour cream
- 2 cups pasta (elbow macaroni or rotini), cooked and drained
- 1 1/2 cups shredded cheddar cheese
- 1 cup mozzarella cheese, shredded
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
- Cook the Beef: In a large skillet over medium heat, cook the ground beef with diced onion until the meat is browned and the onion is soft. Drain any excess grease, then season with garlic powder, salt, and pepper.
- Make the Sauce: Add the tomato sauce, cream of mushroom soup, and sour cream to the skillet with the beef mixture. Stir until well combined and heated through.
- Assemble the Casserole: Spread half of the cooked pasta in the bottom of the greased baking dish. Layer half of the beef mixture over the pasta, then sprinkle with half of the shredded cheddar cheese. Repeat the layers with the remaining pasta, beef mixture, and cheddar cheese.
- Add Mozzarella: Sprinkle the mozzarella cheese evenly over the top layer.
- Bake: Cover the casserole with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Serve: Remove from the oven, garnish with chopped parsley if desired, and serve warm.

- Substitute ground turkey or chicken for a lighter version.
- Try using cream of chicken soup if you don’t have cream of mushroom on hand.
