Instructions
- Make the Cookie Dough:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the egg and vanilla extract, mixing until smooth.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Shape and Bake the Cookies:
- Scoop tablespoon-sized balls of dough and roll them into smooth spheres. Place them on the prepared baking sheet, about 2 inches apart.
- Flatten each ball slightly with your palm. Bake for 10-12 minutes, or until the edges are just starting to turn golden.
- Allow the cookies to cool completely on a wire rack before decorating.
- Prepare the White Chocolate Coating:
- Melt the white chocolate chips or candy melts in a microwave-safe bowl in 20-second intervals, stirring after each, until smooth.
- Decorate the Cookies:
- Dip each cookie into the melted white chocolate, coating the entire surface. Place on a sheet of parchment paper.
- While the coating is still wet, attach two mini marshmallows to the top edge of each cookie for ears. Add candy eyes and a mini chocolate chip or pearl for the nose.
- Use sprinkles or icing to add optional details like scarves or snowflakes.
- Set the Decorations:
- Let the cookies sit at room temperature until the white chocolate hardens completely. To speed up the process, place the cookies in the refrigerator for 10-15 minutes.
