Ingredients

Units Scale

For the Cookies:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

For Decoration:

  • 2 cups white chocolate chips or candy melts
  • Mini marshmallows (for ears)
  • Candy eyes
  • Mini chocolate chips or black edible pearls (for nose)
  • Optional: Red or blue sprinkles for scarves

Instructions

  1. Make the Cookie Dough:
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the egg and vanilla extract, mixing until smooth.
    • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  2. Shape and Bake the Cookies:
    • Scoop tablespoon-sized balls of dough and roll them into smooth spheres. Place them on the prepared baking sheet, about 2 inches apart.
    • Flatten each ball slightly with your palm. Bake for 10-12 minutes, or until the edges are just starting to turn golden.
    • Allow the cookies to cool completely on a wire rack before decorating.
  3. Prepare the White Chocolate Coating:
    • Melt the white chocolate chips or candy melts in a microwave-safe bowl in 20-second intervals, stirring after each, until smooth.
  4. Decorate the Cookies:
    • Dip each cookie into the melted white chocolate, coating the entire surface. Place on a sheet of parchment paper.
    • While the coating is still wet, attach two mini marshmallows to the top edge of each cookie for ears. Add candy eyes and a mini chocolate chip or pearl for the nose.
    • Use sprinkles or icing to add optional details like scarves or snowflakes.
  5. Set the Decorations:
    • Let the cookies sit at room temperature until the white chocolate hardens completely. To speed up the process, place the cookies in the refrigerator for 10-15 minutes.

Notes

  • Store cookies in an airtight container at room temperature for up to 5 days or freeze for up to 1 month.
  • For a colorful variation, use colored candy melts to make polar bears in fun shades!
