Ingredients
-
4 slices of bread (sourdough or white work best)
-
2 tablespoons unsalted butter, softened
-
4 slices mozzarella cheese (or 1 cup shredded mozzarella)
-
1/4 cup marinara or pizza sauce (plus more for dipping)
-
12-16 slices pepperoni (optional)
-
2 tablespoons grated Parmesan cheese (optional)
-
1/4 teaspoon Italian seasoning
-
Pinch of garlic powder
Instructions
-
Butter the bread: Spread butter on one side of each slice of bread. Sprinkle a little garlic powder and Italian seasoning over the buttered side for extra flavor.
-
Assemble the sandwich: On the unbuttered side of two slices, layer mozzarella cheese, marinara sauce, pepperoni (if using), and a sprinkle of Parmesan. Top with the other slices of bread, buttered side out.
-
Grill the sandwich: Heat a skillet over medium heat. Place sandwiches in the pan and cook for 3–4 minutes per side, or until the bread is golden brown and the cheese is melted.
-
Serve hot: Slice and serve with extra marinara sauce for dipping.
Notes
-
Swap in other toppings like cooked sausage, olives, or mushrooms if you like.
-
Use part-skim mozzarella for a lighter option, or try provolone for extra meltiness.
-
To make it extra crispy, press the sandwich slightly with a spatula while grilling.
