The Pineapple Mezcal Sour is a refreshing cocktail that combines smoky mezcal with sweet pineapple juice and a tangy citrus kick. The frothy top and bright flavors make it perfect for summer sipping or any occasion where you want to impress with a vibrant and delicious drink!
Ingredients
- 2 ounces mezcal
- 1 1/2 ounces fresh pineapple juice
- 3/4 ounce fresh lime juice
- 1/2 ounce simple syrup (1:1 sugar to water ratio)
- 1 egg white (optional, for froth)
- Ice
For Garnish:
- Pineapple wedge or slice
- Lime wheel
- A pinch of chili powder or Tajín (optional)
Instructions

Dry Shake:
Add mezcal, pineapple juice, lime juice, simple syrup, and egg white (if using) to a cocktail shaker. Shake well without ice to create a frothy texture. -
Shake with Ice:
Add ice to the shaker and shake vigorously until well-chilled. -
Strain and Serve:
Double strain into a coupe or rocks glass filled with ice. -
Garnish:
Garnish with a pineapple wedge, lime wheel, and a light sprinkle of chili powder or Tajín for a bit of spice.
Notes
- For a sweeter drink, increase the simple syrup to 3/4 ounce.
- To make a non-alcoholic version, swap mezcal with a smoky iced tea or a zero-proof spirit.
- If you prefer not to use egg whites, you can achieve a similar froth with 1/2 ounce of aquafaba (the liquid from a can of chickpeas).
