Description

The Pineapple Mezcal Sour is a refreshing cocktail that combines smoky mezcal with sweet pineapple juice and a tangy citrus kick. The frothy top and bright flavors make it perfect for summer sipping or any occasion where you want to impress with a vibrant and delicious drink!


Ingredients

  • 2 ounces mezcal
  • 1 1/2 ounces fresh pineapple juice
  • 3/4 ounce fresh lime juice
  • 1/2 ounce simple syrup (1:1 sugar to water ratio)
  • 1 egg white (optional, for froth)
  • Ice

For Garnish:

  • Pineapple wedge or slice
  • Lime wheel
  • A pinch of chili powder or Tajín (optional)

Instructions

  1. Dry Shake:
    Add mezcal, pineapple juice, lime juice, simple syrup, and egg white (if using) to a cocktail shaker. Shake well without ice to create a frothy texture.

  2. Shake with Ice:
    Add ice to the shaker and shake vigorously until well-chilled.

  3. Strain and Serve:
    Double strain into a coupe or rocks glass filled with ice.

  4. Garnish:
    Garnish with a pineapple wedge, lime wheel, and a light sprinkle of chili powder or Tajín for a bit of spice.

 



Notes

  • For a sweeter drink, increase the simple syrup to 3/4 ounce.
  • To make a non-alcoholic version, swap mezcal with a smoky iced tea or a zero-proof spirit.
  • If you prefer not to use egg whites, you can achieve a similar froth with 1/2 ounce of aquafaba (the liquid from a can of chickpeas).
