- 1/4 cup (60 g) unsalted butter, melted
Instructions
- Drain the pineapple:
- Use a fine mesh strainer or cheesecloth to drain the crushed pineapple thoroughly. Squeeze out as much liquid as possible to avoid a runny mixture.
- Mix the ingredients:
- In a large mixing bowl, combine the drained pineapple, graham cracker crumbs, shredded coconut, granulated sugar, and melted butter. Mix until a cohesive dough forms.
- Chill the mixture:
- Cover the bowl and refrigerate for 30 minutes to allow the mixture to firm up, making it easier to shape.
- Shape the balls:
- Roll the chilled mixture into small balls, about 1 inch in diameter. Coat each ball in the extra shredded coconut by rolling it in a shallow dish of coconut.
