Description

These Pineapple Christmas Balls are a festive and tropical treat perfect for holiday gatherings. Made with crushed pineapple, sweetened coconut, and graham crackers, these no-bake delights are simple to prepare and full of flavor.

Ingredients

Units Scale
  • 1 can (20 oz/567 g) crushed pineapple, well-drained
  • 2 cups (200 g) graham cracker crumbs
  • 1 cup (100 g) shredded sweetened coconut (plus extra for rolling)
  • 1/2 cup (100 g) granulated sugar
  • 1/4 cup (60 g) unsalted butter, melted

Instructions

  • Drain the pineapple:
    • Use a fine mesh strainer or cheesecloth to drain the crushed pineapple thoroughly. Squeeze out as much liquid as possible to avoid a runny mixture.
  • Mix the ingredients:
    • In a large mixing bowl, combine the drained pineapple, graham cracker crumbs, shredded coconut, granulated sugar, and melted butter. Mix until a cohesive dough forms.
  • Chill the mixture:
    • Cover the bowl and refrigerate for 30 minutes to allow the mixture to firm up, making it easier to shape.
  • Shape the balls:
    • Roll the chilled mixture into small balls, about 1 inch in diameter. Coat each ball in the extra shredded coconut by rolling it in a shallow dish of coconut.
  • Chill before serving:
    • Place the finished balls on a baking sheet lined with parchment paper. Refrigerate for at least 1 hour before serving to let them set.
  • Serve:
    • Transfer the chilled pineapple balls to a festive serving platter and enjoy!

Notes

  • Storage: Store the pineapple balls in an airtight container in the refrigerator for up to 5 days.
  • Make-ahead: These can be made up to 2 days in advance, making them a convenient holiday treat.
  • Variations: Add finely chopped nuts, such as pecans or walnuts, to the mixture for extra texture and flavor.
