- 2 cups fresh pineapple, diced
- 1 chipotle pepper in adobo sauce, minced (adjust for spice level)
- 1 tablespoon adobo sauce (from the can)
- 1/2 cup red bell pepper, diced
- 1/2 cup red onion, finely chopped
- 1 small jalapeño, seeded and minced (optional for extra heat)
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

- Dice pineapple, red bell pepper, and red onion.
- Mince chipotle pepper and jalapeño (if using).

- In a large bowl, combine pineapple, chipotle pepper, adobo sauce, red bell pepper, red onion, jalapeño, and cilantro.
- Add lime juice, salt, and black pepper. Stir well.
