This pineapple chipotle salsa is sweet, smoky, and spicy—perfect for tacos, grilled meats, or as a fresh dip with tortilla chips!


Ingredients

  • 2 cups fresh pineapple, diced
  • 1 chipotle pepper in adobo sauce, minced (adjust for spice level)
  • 1 tablespoon adobo sauce (from the can)
  • 1/2 cup red bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1 small jalapeño, seeded and minced (optional for extra heat)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Prepare Ingredients:

    • Dice pineapple, red bell pepper, and red onion.
    • Mince chipotle pepper and jalapeño (if using).
  • Mix the Salsa:

    • In a large bowl, combine pineapple, chipotle pepper, adobo sauce, red bell pepper, red onion, jalapeño, and cilantro.
    • Add lime juice, salt, and black pepper. Stir well.

 

  • Chill & Serve:

    • Let sit for 10-15 minutes to allow flavors to meld.
