Scale
For the Chicken Wings:
- 2 lbs (900g) chicken wings, split into flats and drumettes
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
For the Glaze:
- 1/2 cup (120g) apricot preserves
- 1/4 cup (60ml) pineapple juice
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tsp fresh ginger, grated
- 1 clove garlic, minced
- 1/2 tsp red pepper flakes (optional, for a spicy kick)
Instructions
- Preheat the Oven:
- Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
- Prepare the Chicken Wings:
- Pat the wings dry with paper towels and place them in a large mixing bowl.
- Toss the wings with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
- Arrange the wings in a single layer on the wire rack.
- Bake the Wings:
- Bake the wings in the preheated oven for 40-45 minutes, flipping halfway through, until they are crispy and cooked through (internal temperature of 165°F or 74°C).
- Make the Glaze:
- While the wings are baking, combine apricot preserves, pineapple juice, soy sauce, honey, ginger, garlic, and red pepper flakes (if using) in a small saucepan.
- Heat over medium heat, stirring occasionally, until the mixture comes to a gentle boil. Reduce heat and simmer for 5-7 minutes until slightly thickened.
- Coat the Wings:
- Remove the baked wings from the oven and transfer them to a large bowl. Pour the glaze over the wings and toss until evenly coated.
- Broil (Optional):
- For a stickier finish, return the glazed wings to the wire rack and broil on high for 2-3 minutes, watching carefully to avoid burning.
- Serve:
- Garnish with chopped parsley, green onions, or sesame seeds if desired. Serve warm with napkins on hand!
Notes
- For extra crispy wings, pat them dry thoroughly and bake on a wire rack to allow air circulation.
- If you prefer a thinner glaze, add a splash more pineapple juice. For a thicker glaze, simmer longer to reduce.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated in the oven.
