Description

Pimento Cheese and Bacon Crostini are crispy toasted baguette slices topped with creamy homemade pimento cheese and crispy bacon. A rich and savory appetizer ideal for parties or gatherings.

  • 1 baguette, sliced into 1/2-inch rounds
  • 1 tablespoon olive oil
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup cream cheese, softened
  • 1/4 cup mayonnaise
  • 1/4 cup diced pimentos, drained
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1/3 cup cooked bacon, crumbled
  • Chopped chives or parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and brush lightly with olive oil.
  2. Toast in the oven for 5-7 minutes until golden and crisp. Remove and let cool slightly.
  3. In a bowl, mix cheddar cheese, cream cheese, mayonnaise, pimentos, garlic powder, onion powder, salt, and pepper until well combined.
  4. Spread a generous spoonful of the pimento cheese mixture onto each toasted baguette slice.
  5. Top with crumbled bacon and return to the oven for 3-5 minutes, until slightly warmed.
  6. Garnish with chopped chives or parsley if desired and serve warm or at room temperature.
