- 1/4 cup cream cheese, softened
- 1/4 cup mayonnaise
- 1/4 cup diced pimentos, drained
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 1/3 cup cooked bacon, crumbled
- Chopped chives or parsley for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and brush lightly with olive oil.
- Toast in the oven for 5-7 minutes until golden and crisp. Remove and let cool slightly.
- In a bowl, mix cheddar cheese, cream cheese, mayonnaise, pimentos, garlic powder, onion powder, salt, and pepper until well combined.
- Spread a generous spoonful of the pimento cheese mixture onto each toasted baguette slice.
- Top with crumbled bacon and return to the oven for 3-5 minutes, until slightly warmed.
- Garnish with chopped chives or parsley if desired and serve warm or at room temperature.
