- 1 tbsp olive oil
- 1/2 lb ribeye or sirloin steak, thinly sliced
- 1/2 green bell pepper, diced
- 1/2 onion, diced
- 1 clove garlic, minced
- 4 oz cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 cup shredded provolone or mozzarella cheese
- Salt and black pepper to taste
- Chopped parsley (optional, for garnish)
- Sliced baguette, tortilla chips, or crackers for serving
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium-high heat. Add steak and cook until browned. Remove and set aside.

- Chop the cooked steak into small pieces and return to the skillet with the veggies.
- In a bowl, mix cream cheese, sour cream, and mayonnaise until smooth. Stir in half of the shredded cheese.
- Add the beef and veggie mixture to the bowl and combine well. Season with salt and pepper.
- Transfer the mixture to a baking dish, top with remaining cheese, and bake for 15–20 minutes, until hot and bubbly.
- Garnish with parsley if desired and serve immediately with bread or chips.
Notes
- Use deli roast beef as a shortcut for the steak.
- Try a mix of provolone, mozzarella, or cheddar for a cheesier flavor.
- Make ahead and bake just before serving.
