- 1 lb (450g) pizza dough
- 1/3 cup basil pesto
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1 tbsp olive oil
- 1/2 tsp Italian seasoning
- Flour or cornmeal, for dusting
Instructions
- Preheat oven to 220°C (425°F). Line a baking sheet or pizza stone with parchment paper and dust with flour or cornmeal.
- Roll out pizza dough into a circle about 12 inches wide. Place crumbled feta around the edge of the dough. Fold edges over feta and pinch to seal, creating a stuffed crust.
- Spread pesto evenly over the center of the dough, avoiding the crust.
- Top with mozzarella, cherry tomatoes, and red onion slices.
- Brush crust with olive oil and sprinkle with Italian seasoning.
- Bake for 15-18 minutes, or until the crust is golden and cheese is bubbly.
- Cool slightly before slicing and serving.
