- 1 cup chopped pepperoni
- 1/4 cup pizza or marinara sauce (for dipping)
Instructions
- Preheat oven to 375°F (190°C). Grease a 24-cup mini muffin tin.
- In a large bowl, whisk together flour, baking powder, and Italian seasoning.
- Stir in milk and egg until well combined.
- Fold in mozzarella, Parmesan, and chopped pepperoni.
- Let the batter rest for 10 minutes to hydrate.
- Spoon the batter evenly into the mini muffin cups, filling about 3/4 full.
- Bake for 18–20 minutes, or until puffed and golden.
- Let cool slightly before removing from tin. Serve warm with pizza or marinara sauce for dipping.
