Description

Pepperoni Chicken is a cheesy, low-carb dinner dish where tender chicken breasts are topped with marinara sauce, melty mozzarella, and spicy pepperoni slices for a pizza-inspired twist.


Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 cup marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2024 slices pepperoni
  • 1 teaspoon Italian seasoning
  • Fresh basil or parsley, for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. Season chicken breasts with salt and pepper.
  3. In a skillet over medium-high heat, heat olive oil and sear chicken on both sides until golden, about 2–3 minutes per side. Transfer to the baking dish.
  4. Spoon marinara sauce over each chicken breast.
  5. Top with shredded mozzarella and a sprinkle of Parmesan cheese.
  6. Place 5–6 slices of pepperoni on top of each piece of chicken and sprinkle with Italian seasoning.
  7. Bake for 20–25 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C).
  8. Garnish with fresh basil or parsley and serve hot.

Notes

  • Use turkey pepperoni for a lighter version.
  • Serve with a side salad or roasted vegetables for a complete meal.
  • Leftovers reheat well and are great for meal prep.
