- 12–14 graham cracker sheets (enough to cover your baking sheet)
- 1 cup (226 g) unsalted butter
- 1 cup (200 g) brown sugar, packed
- 2 cups (340 g) semi-sweet or milk chocolate chips
- 1/2 cup (75 g) crushed peppermint candies or candy canes
Instructions
- Preheat the oven:
- Preheat your oven to 350°F (175°C). Line a rimmed baking sheet (10×15 inches) with parchment paper or aluminum foil, and spray lightly with non-stick spray.
- Arrange the graham crackers:
- Place the graham crackers in a single layer on the prepared baking sheet, breaking them as needed to fit snugly.
- Make the toffee layer:
- In a medium saucepan, melt the butter and brown sugar over medium heat. Stir constantly until the mixture comes to a boil.
- Let it boil for 3-4 minutes without stirring, until it thickens slightly. Remove from heat and pour the toffee evenly over the graham crackers, spreading with a spatula to cover.
- Bake:
- Bake the toffee-covered graham crackers in the preheated oven for 8-10 minutes, or until the toffee is bubbly and golden.
- Add the chocolate layer:
- Remove the baking sheet from the oven and immediately sprinkle the chocolate chips over the hot toffee. Let them sit for 2-3 minutes to soften, then use a spatula to spread the melted chocolate evenly.
- Top with peppermint:
- Sprinkle the crushed peppermint candies evenly over the chocolate layer while it is still warm.
- Cool and set:
- Allow the toffee to cool at room temperature for 30 minutes, then transfer to the refrigerator to set completely (about 1 hour).
- Break into pieces:
- Once set, break the toffee into pieces and serve or package as gifts.
