Description

A whimsical and colorful Peeps Sunflower Layer Cake featuring moist vanilla layers stacked with creamy frosting, decorated with vibrant Peeps marshmallow candies arranged like sunflower petals.

  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup whole milk
  • Buttercream frosting: 1 cup unsalted butter, softened; 4 cups powdered sugar; 2 tsp vanilla extract; 3-4 tbsp milk
  • Peeps marshmallow candies (yellow and orange) for decoration
  • Edible sunflower seeds or chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a bowl, whisk flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  5. Alternate adding dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.
  6. Divide batter evenly among pans and bake for 25–30 minutes or until a toothpick comes out clean.
  7. Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
  8. Prepare buttercream by beating butter until creamy, gradually adding powdered sugar, vanilla, and milk until smooth and spreadable.
  9. Layer cakes with buttercream between each layer and around the outside.
  10. Decorate the top of the cake with Peeps marshmallow candies arranged in a sunflower pattern, using yellow for petals and orange for the center.
  11. Optionally sprinkle edible sunflower seeds or chocolate chips in the center for added texture.
