These Pecan Pie Bites are mini versions of the classic pecan pie, delivering all the buttery, nutty, and caramelized goodness in bite-sized portions. Perfect for parties, holidays, or anytime you need a small indulgence!

For the Crust

  • 1 1/4 cups all-purpose flour
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 2 tbsp granulated sugar
  • 23 tbsp ice water

For the Filling

  • 1/2 cup brown sugar
  • 1/2 cup light corn syrup
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 large egg
  • 1 cup chopped pecans

Instructions

1. Make the Crust

  1. In a food processor, combine the flour, sugar, and salt. Pulse to mix.
  2. Add the cold butter cubes and pulse until the mixture resembles coarse crumbs.
  3. Gradually add the ice water, 1 tablespoon at a time, pulsing until the dough comes together.
  4. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

2. Prepare the Filling

  1. In a medium bowl, whisk together the brown sugar, corn syrup, melted butter, vanilla extract, salt, and egg until smooth.
  2. Stir in the chopped pecans.

3. Assemble the Bites

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. Roll out the chilled dough on a floured surface to about 1/8-inch thickness.
  3. Use a round cutter (about 2 1/2 inches in diameter) to cut out circles and press each circle into the mini muffin tin, forming small tart shells.
  4. Spoon about 1 tablespoon of the pecan filling into each shell, being careful not to overfill.

4. Bake

  1. Bake for 20–25 minutes, or until the filling is set and the crust is golden brown.
  2. Let the bites cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.

5. Serve

  1. Serve at room temperature or slightly warmed. These bites are delicious on their own or topped with a dollop of whipped cream.

Notes

  • Make Ahead: These bites can be made a day in advance and stored in an airtight container.
  • Freezing: Freeze the baked bites for up to 2 months. Thaw at room temperature before serving.
  • Variations: Add a splash of bourbon or a sprinkle of sea salt for an extra twist.
