These Pecan Pie Bites are mini versions of the classic pecan pie, delivering all the buttery, nutty, and caramelized goodness in bite-sized portions. Perfect for parties, holidays, or anytime you need a small indulgence!

For the Crust
- 1 1/4 cups all-purpose flour
- 1/2 cup (1 stick) unsalted butter, cold and cubed
- 2 tbsp granulated sugar
- 2–3 tbsp ice water
For the Filling
- 1/2 cup brown sugar
- 1/2 cup light corn syrup
- 2 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 large egg
- 1 cup chopped pecans
Instructions
1. Make the Crust
- In a food processor, combine the flour, sugar, and salt. Pulse to mix.
- Add the cold butter cubes and pulse until the mixture resembles coarse crumbs.
- Gradually add the ice water, 1 tablespoon at a time, pulsing until the dough comes together.
- Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
2. Prepare the Filling
- In a medium bowl, whisk together the brown sugar, corn syrup, melted butter, vanilla extract, salt, and egg until smooth.
- Stir in the chopped pecans.
3. Assemble the Bites
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
- Roll out the chilled dough on a floured surface to about 1/8-inch thickness.
- Use a round cutter (about 2 1/2 inches in diameter) to cut out circles and press each circle into the mini muffin tin, forming small tart shells.
- Spoon about 1 tablespoon of the pecan filling into each shell, being careful not to overfill.
4. Bake
- Bake for 20–25 minutes, or until the filling is set and the crust is golden brown.
- Let the bites cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
5. Serve
- Serve at room temperature or slightly warmed. These bites are delicious on their own or topped with a dollop of whipped cream.
Notes
- Make Ahead: These bites can be made a day in advance and stored in an airtight container.
- Freezing: Freeze the baked bites for up to 2 months. Thaw at room temperature before serving.
- Variations: Add a splash of bourbon or a sprinkle of sea salt for an extra twist.
