For the Shortbread Crust

  • 1 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 tsp salt

For the Pecan Filling

  • 1 cup brown sugar, packed
  • 1/2 cup light corn syrup (or maple syrup for a twist)
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 cups chopped pecans

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
  2. Make the Shortbread Crust:
    • In a large bowl, beat the butter and granulated sugar together until creamy. Add the flour and salt, mixing until the dough comes together.
    • Press the dough evenly into the prepared baking pan to form the crust. Use your hands or the bottom of a glass to press it firmly.
    • Bake the crust for 20 minutes, or until lightly golden. Remove from the oven and set aside.
  3. Prepare the Pecan Filling:
    • In a medium bowl, whisk together the brown sugar, corn syrup, melted butter, eggs, and vanilla extract until smooth. Stir in the chopped pecans.
  4. Assemble the Bars:
    • Pour the pecan mixture evenly over the pre-baked crust, spreading it to cover the surface.
  5. Bake the Bars:
    • Bake for 30–35 minutes, or until the filling is set and slightly puffed. The center should jiggle slightly but firm up as it cools.
  6. Cool and Slice:
    • Allow the bars to cool completely in the pan. For easier slicing, refrigerate for at least 1 hour before cutting into squares or rectangles.
  7. Serve:
    • Serve at room temperature and enjoy!
