For the Shortbread Crust
- 1 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 2 cups all-purpose flour

- 1 cup brown sugar, packed
- 1/2 cup light corn syrup (or maple syrup for a twist)
- 1/2 cup unsalted butter, melted
- 3 large eggs
- 1 tsp vanilla extract
- 2 cups chopped pecans

- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
- Make the Shortbread Crust:
- In a large bowl, beat the butter and granulated sugar together until creamy. Add the flour and salt, mixing until the dough comes together.
- Press the dough evenly into the prepared baking pan to form the crust. Use your hands or the bottom of a glass to press it firmly.
- Bake the crust for 20 minutes, or until lightly golden. Remove from the oven and set aside.
- Prepare the Pecan Filling:
- In a medium bowl, whisk together the brown sugar, corn syrup, melted butter, eggs, and vanilla extract until smooth. Stir in the chopped pecans.
- Assemble the Bars:
- Pour the pecan mixture evenly over the pre-baked crust, spreading it to cover the surface.
- Bake the Bars:
- Bake for 30–35 minutes, or until the filling is set and slightly puffed. The center should jiggle slightly but firm up as it cools.
- Cool and Slice:
- Allow the bars to cool completely in the pan. For easier slicing, refrigerate for at least 1 hour before cutting into squares or rectangles.
- Serve:
- Serve at room temperature and enjoy!
