Ingredients
-
1 1/2 cups rolled oats
-
1/2 cup natural peanut butter (creamy or crunchy)
-
1/4 cup honey or maple syrup
-
1/4 cup coconut oil, melted
-
1/2 teaspoon vanilla extract
-
Pinch of salt
-
Optional topping: 1/4 cup dark chocolate chips or melted chocolate for drizzling
Instructions
-
Line a muffin tin with silicone liners or paper liners.
-
In a medium bowl, mix together the oats, peanut butter, honey, melted coconut oil, vanilla, and salt until well combined.
-
Divide the mixture evenly into the muffin cups and press down firmly to form a solid base.
-
If desired, sprinkle with chocolate chips or drizzle with melted chocolate.
-
Place the tray in the fridge for at least 1 hour, or until firm.
-
Once set, remove from liners and store in an airtight container in the fridge for up to 1 week, or freeze for longer storage.
Notes
-
To make it vegan, use maple syrup instead of honey.
-
Add 1–2 tablespoons of chia seeds or ground flaxseed for an extra nutrition boost.
-
You can also add a scoop of protein powder for higher protein content—just add a splash more coconut oil or syrup if the mixture gets too dry.
