  • 1/2 cup (115g) unsalted butter
  • 2 cups (400g) granulated sugar
  • 1/2 cup (120ml) milk
  • 1/4 cup (30g) cocoa powder
  • 1 cup (240g) creamy peanut butter
  • 1 tbsp vanilla extract
  • 3 cups (270g) quick oats
  • Pinch of salt

Instructions

  • Cook the Mixture:
    • In a medium saucepan, melt the butter over medium heat.
    • Add the sugar, milk, and cocoa powder, whisking until combined.
    • Bring the mixture to a rolling boil, then let it boil for 1 minute. Stir occasionally to prevent burning.
  • Add Peanut Butter and Vanilla:
    • Remove the saucepan from heat and stir in the peanut butter, vanilla extract, and a pinch of salt until smooth.
  • Mix in the Oats:
    • Add the oats and stir until fully coated.
  • Form the Cookies:
    • Using a tablespoon or cookie scoop, drop spoonfuls of the mixture onto parchment paper or a silicone baking mat. Flatten slightly with the back of a spoon, if desired.
  • Let Cool:
    • Allow the cookies to cool and set at room temperature for about 30-45 minutes. Once set, enjoy!
